In the state of Ohio, County Fairs traditionally gather to showcase various aspects of agriculture, annually. Livestock exhibits are opportunities to demonstrate the impacts of proper genetics and management practices to be evaluated on hoof. Carcass shows is an additional opportunity for youth exhibitors to see and understand firsthand the results of their efforts in raising a food animal. Exhibitors and families will have a better understanding of the evaluation process following the USDA grading system. Key take away points include, but not limited to percent saleable product, quality attributes, and economic values.
Counties in need of a carcass judge can rely on faculty, staff , and alumni of Ohio State University who were involved with a meat science program including the participation on a meat judging team. Below is a list of judges to consider when in need. It is best to request a judge at least two months in advance.
